Chenopodium album. Goosefoot, pigsweed, wild spinach. A nutritional powerhouse, lambsquarters routinely outperforms spinach and kale in vitamin and mineral content. A cup of chopped goosefoot leaves, for example, contains about 15 more times calcium and 8 times more vitamin C than the same amount of spinach. Plus it grows everywhere, is free, and tastes good—though it’s better cooked than eaten raw. A native variety, Chenopodium berlandieri, was one of the earliest plants cultivated in North America. Archaeologists have found seeds dating from 3,500 years ago, predating the cultivation of corn.
